Alimentos funcionais, org\u00e2nicos e sem modifica\u00e7\u00f5es gen\u00e9ticas est\u00e3o inclusos nesta \u00e1rea. \u201c\u00c9 uma tend\u00eancia e \u00e9 transversal, voc\u00ea encontra desde a mat\u00e9ria-prima com certifica\u00e7\u00e3o at\u00e9 card\u00e1pios de restaurantes com informa\u00e7\u00f5es de que o produto \u00e9 certificado, org\u00e2nico ou sem manipula\u00e7\u00e3o gen\u00e9tica\u201d, diz Carrer.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"2_Valorizacao_da_origem\"><\/span><strong>2. Valoriza\u00e7\u00e3o da origem<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Outra tend\u00eancia, que \u00e9 especialmente boa para pequenas empresas, \u00e9 a da valoriza\u00e7\u00e3o da origem do produto. \u201c\u00c9 uma combina\u00e7\u00e3o da quest\u00e3o de ser fresco com a quest\u00e3o social, de ajudar a comunidade\u201d, diz. Mostrar onde o produto foi feito, com quais ingredientes e pessoas, e qual o impacto disso para a regi\u00e3o \u00e9 o caminho para aproveitar esta onda.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"3_Customizacao\"><\/span><strong>3. Customiza\u00e7\u00e3o<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Quer um bolo com formato de desenho animado, em tr\u00eas sabores? \u00c9 poss\u00edvel. A grande sacada da customiza\u00e7\u00e3o \u00e9 tornar todos os desejos do consumidor poss\u00edveis. Segundo Carrer, um dos grandes exemplos de sucesso nessa \u00e1rea \u00e9 o confeiteiro Buddy Valastro, conhecido como Cake Boss. \u201cEle tem uma linha de produtos pr\u00e9-fabricados, com grande gama de op\u00e7\u00f5es, mas d\u00e1 a op\u00e7\u00e3o de customizar o bolo como a pessoa quiser\u201d, diz. As ideias v\u00e3o longe: de massas feitas com cores e formatos espec\u00edficos a impress\u00e3o 3D para alimentos.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"4_Servicos_sob_medida\"><\/span><strong>4.
